Santa Fe Stew Recipe

This stew recipe is one of my favorites. It’s spicy and hearty like chili and full of beans and vegetables. And the best part is, it takes less than 30 minutes to make. So you can prepare it, let it simmer, and it makes more than enough for two meals to feed a family of four.
Santa Fe Stew
Ingredients for Santa Fe Stew
1 lb ground beef
1 package of taco seasoning (McCormick or Taco Bell is best)
1 package of Ranch Dressing
1 yellow onion (chopped)
Brown ground meat. Mix in taco seasoning, Ranch dressing, and chopped onion. Let sit on medium-low for 20 minutes.
In a large pot place meat and onions. Add the following including liquid from cans.
2 cans of pinto beans
2 cans diced tomatoes (1 can should be Rotel with diced green chiles)
2 cans whole kernel corn
1 can kidney beans
1 can black eyed peas
1 15 oz jar of V8 juice
1 tsp of crushed red pepper
Simmer for 30 minutes to an hour. Stir occasionally. Enjoy.
